breakfast criminals: apple pie soaked oats

If the first thing that comes to mind when I say “oats” is oatmeal, then I’m about to rock your world.
Soaked oats is one of my favourite raw, super easy to make, and portable breakfasts. I’ve even noticed a few cool ladies in New York carrying mason jars with oats in their lululemon totes. Clearly it’s a trend.
One of the most popularized versions of soaked oats is Bircher Muesli. A staple breakfast in Australia and New Zealand, it’s made with uncooked oats soaked overnight with apples, apple juice, nuts and yogurt. My version is raw, vegan, gluten-free, added sugar-free and dairy-free, and it tastes just like good ole’ apple pie—the healthy edition.
One of the benefits of soaking your oats is that it reduces their phytic acid content, and releases enzymes, which makes the oats more easily digestable.
Added bonus: soaking also makes the texture more fun, adding satisfying thickness and fluffiness to your breakfast.
APPLE PIE SOAKED OATS
raw, vegan, gluten-free, added sugar-free and dairy-free
Ingredients (mix in a bowl, then transfer to a glass jar to soak overnight):
1/3 cup oats (I use regular gluten-free oats or Purely Elizabeth ancient grain oatmeal)
1 peeled, grated green apple
1 tbs unsweetened shredded coconut
2 tbs raw walnuts
½ tsp cinnamon
1 tsp sweetener of choice (I recommend brown rice syrup, agave or honey)
2/3 cup almond milk
Optional superfood twist: 1 tsp baobab, 1 tsp maca
In the morning, transfer your Apple Pie Soaked Oats to a bowl and top with fresh berries, coconut shreds and goji berries, or enjoy straight out of the jar.
This smoothie bowl is full of fiber, antioxidants, vitamins B, C and E, omega-3 fats, and copper.
It supports healthy digestion, skin, and heart, stabilizes blood sugar, boosts immunity, and helps control appetite.
